On September 16, Mexico celebrates its Independence Day. It marks the beginning of a decade-long revolution.
Commonly confused with Cinco de Mayo, this holiday celebrates the moment when Father Hidalgo called for Mexico's independence from Spain in September 1810. The day is marked by a national holiday in Mexico, an array of performances from fireworks to dance routines.

How to make Chilaquiles
- 2 bowls of corn chips
- 1/2 cup of sour cream
- 1 cup of Salsa Verde and/or Red Salsa
- 1/2 cup of cheese (any of your favourite one), Jalapeños to your liking, salt & pepper, 1/4 of an onion (optional) and top with coriander.

- Grab corn chips (can be store bought or home made!). I personally like making them at home by cutting corn tortillas and then frying them!
- Meanwhile, bring Salsa Verde or Homemade Style Red Mexican Salsa to a simmer in a medium saucepan. Stirring gently heated through, about 2 minutes. Season with salt and pepper, and add on top of the corn chips.
- Serve and top with feta, ricotta or mozzarella, sour cream, onion, Jalapeños & coriander. You can also add some avocados or salsa Pico de Gallo.
