What's the difference between Elotes and Esquites?
Esquites is Mexican street corn served off the cob and in a cup, whereas Elote is Mexican street corn served on the cob.

Ingredients
2 cans of kernel corn
1/2 cup of mayonnaise or sour cream
1 tbsp of lime or lemon juice
1/4 cup of feta, parmesan or mozzarrela cheese (grated)
1/4 tbsp of Tajin
Coriander chopped (optional)
Directions
- Drain canned corn and either cook over the stove or microwave until hot
- Mix all the ingredients
- Divide corn between two cups and sparkle coriander on top
